Aubergine, Mint and Couscous Salad

Preparation time – 3 minutes
Cooking time – 6 minutes
For speedy results, try packet couscous – garlic and coriander is good for this salad.

1 large aubergine, cut into chunks 30ml/ 2 tbsp olive oil 115g/ 4 oz packet flavoured couscous 30ml/ 2 tbsp chopped fresh mint Salt and freshly ground black pepper
- Preheat the grill to high. Toss the aubergine chunks with the olive oil. Season with salt and pepper to taste and spread them on a non-stick baking sheet.
- Grill for 5-6 minutes turning occasionally, until golden brown.
- Meanwhile, prepare the flavoured couscous according to the instructions on the packet.
- Stir the grilled aubergines and fresh mint into the couscous, toss thoroughly and serve immediately.
