Aubergine, Mint and Couscous Salad

For speedy results, try packet couscous – garlic and coriander is good for this salad.

1 large aubergine, cut into chunks 30ml/ 2 tbsp olive oil 115g/ 4 oz packet flavoured couscous 30ml/ 2 tbsp chopped fresh mint Salt and freshly ground black pepper


  1. Preheat the grill to high. Toss the aubergine chunks with the olive oil. Season with salt and pepper to taste and spread them on a non-stick baking sheet.
  2. Grill for 5-6 minutes turning occasionally, until golden brown.
  3. Meanwhile, prepare the flavoured couscous according to the instructions on the packet.
  4. Stir the grilled aubergines and fresh mint into the couscous, toss thoroughly and serve immediately.
Variation: For more colour, try grilling 6 baby plum tomatoes alongside the aubergine.
