Baked Courgettes

Cooking time – 25 minutes

Particularly delicious when using very small and fresh courgettes.


8 small courgettes, about 450 g/1 lb total weight 15 ml/1 tbsp olive oil, plus extra for greasing 75-115 g/3-4 oz goat’s cheese, cut into thin strips A small bunch of fresh mint, finely chopped Freshly ground black pepper


  1. Preheat the oven to 180’C/160’C Fan/350’F/Gas 4
  2. Cut out eight rectangles of foil large enough to encase each courgette and brush each with a little oil.
  3. Trim the courgettes at each end and cut a thin slit along the length of each. Insert pieces of goat’s cheese in the slits. Add a little mint and sprinkle with the olive oil and black pepper.
  4. Wrap each courgette in the foil rectangles, place on a baking sheet and bake for about 25 minutes until tender.
