An Italian classic salad, wonderful and fresh, best served with hot crunchy garlic bread.

400g tin chick peas, drained 400g tin red kidney beans, drained 400g tin butter beans, drained 1 red onion, finely sliced 1 unwaxed lemon 2 tbsps extra virgin olive oil 2 tbsp chopped mint leaves Salt and freshly ground black pepper 2 x 200g tins tuna in spring water, drained


  1. In a large bowl, put all the beans with the sliced onion.
  2. Squeeze in the juice of half of the lemon and add the olive oil.
  3. Add the mint and season to taste with salt and pepper.
  4. Mix everything together and leave to rest for at least 10 minutes for the flavours to come together.
