A creamy sumptuous desert.

Nutritional count per serving:
1.8g fat of which saturates 1.1g; 491kj/118 kcal; 21g carbohydrate; 3.9g protein; 1.2g fibre.


300 g Blackberries 1 tbsp caster sugar 250 g carton mascarpone ½ tsp vanilla extract 142 ml carton double cream


  1. Heat the blackberries (keeping back a few for decoration) gently with the sugar for a couple of minutes or until they give off juice.
  2. Whiz in a food processor then push through a fine sieve to remove seeds.
  3. Beat the mascarpone with a spoon until it is floppy then fold in the blackberry purée and the vanilla extract. In a separate bowl, loosely whip the cream then fold it into the blackberry mixture. Spoon into 4 serving dishes and decorate with the reserved blackberries.
