Bocconcini, Prosciutto and Herb Salad

If you cannot find bocconcini, just use a regular ball of mozzarella and tear into pieces.

100 g bag herb salad 2 large tomatoes, cut into wedges 1 avocado, peeled and sliced 10 bocconcini, halved 4 slices prosciutto 2 tbsp pine nuts, toasted* Olive oil 1 lemon, juiced Salt and freshly ground black pepper


  1. Tip the salad leaves into a large shallow bowl. Add the tomatoes, avocado and bocconcini. Grill or dry fry the prosciutto slices until they crisp up and then break them into pieces over the salad. Scatter over the pine nuts.
  2. Dress with olive oil, lemon juice and lots of seasoning. Serve with crusty bread.
