Full of vitality and vitamins, this is a lovely light and healthy salad.

1 small crisp lettuce, torn into pieces 225 g/8 oz young spinach leaves 2 carrots, coarsely grated 115 g/4 oz cherry tomatoes, halved 2 celery sticks, thinly sliced 75g/ 3 oz raisins 50g/ 20 oz blanched almonds or unsalted cashew nuts, halved 30 ml/2 tbsp sunflower seeds 30 ml/ 2 tbsp sesame seeds, lightly toasted For the dressing: 45ml/3 tbsp extra virgin olive oil 30ml/2 tbsp cider vinegar 10ml/2 tbsp clear honey Juice of 1 small orange Salt and ground black pepper
- Put the lettuce, spinach, carrots, tomatoes and celery in a large bowl. Add the raisins, almonds and the sunflower and sesame seeds.
- Put all the dressing ingredients in a screw-top jar and shake well to combine, then pour over the salad.
- Toss the salad thoroughly and divide among four small salad bowls. Season with salt and pepper and serve immediately.
