Caribbean Haddock Fritters

Makes a scrummy starter or part of a buffet party,

Preparation time – 2 hours 20 minutes
Cooking time – 10 minutes


1 tsp yeast 50 ml/ 1 ¾ fl oz water ½ tsp sugar 250 g/ 9 oz plain flour 1 tsp baking powder 1 tsp black pepper ½ tsp allspice 100 ml/ 3 ½ fl oz milk 250 g/ 9 oz haddock, cooked 1 onion, peeled and finely chopped 2 red chillies, finely chopped ½ Habanero pepper, finely chopped 3 – 4 spring onions, finely chopped 2 tsp dried thyme 1 egg, beaten Vegetable oil for deep-frying


  1. Add the yeast to the water with the sugar, stir well and set aside for 10 minutes until it starts to foam.
  2. Whisk the flour, baking powder, pepper and allspice together, then stir in the yeast mixture, beaten egg and milk and make a smooth batter.
  3. Flake in the haddock, removing any bones, and stir to coat, then stir in the remaining ingredients. Leave to rest for 2 hours.
  4. Heat the oil to 180’C/ 350’F and drop in the batter using a tablespoon. Fry on all sides until golden brown, then drain on kitchen paper.
  5. Serve hot
