Cheesy Creamy Leeks

Cooking time – 20 – 25 minutes

A comforting rich dish which is so simple to prepare. Works on its own served with a green salad or as an accompaniment to any meat or fish dish.

4 large leeks or 12 baby leeks, trimmed and washed to remove any grit 15 ml/ 1 tbsp olive oil 150 ml/ ¼ pint double cream ½ tsp Dijon mustard 75 g/ 3 oz mature Cheddar cheese, grated Salt and freshly ground black pepper


  1. Preheat the grill to high. If using large leeks, slice them lengthways. Heat the oil in a large frying pan and add the leeks. Season with salt and pepper and cook for about 4 – 5 minutes, stirring occasionally until starting to turn golden.
  2. Pour the cream into the pan and stir until well combined. Allow to bubble gently for a few minutes, and then stir in the Dijon mustard.
  3. Transfer the leeks to a shallow ovenproof dish and sprinkle with the cheese. Grill for about 4-5 minutes, or until the cheese is golden brown and bubbling. Serve immediately.
