every one a dinner
Preparation time – 5 minutes
Cooking time – 10 minutes
Makes a great start for a dinner party – or a Saturday brunch.
4 large field mushrooms or Portabella mushrooms 100 g/4 oz Gorgonzola or other blue cheese, crumbled 25 g/1 oz walnuts, toasted and roughly chopped 4 thyme sprigs Large knob of butter, cut into small dice Rocket leaves to serve
- Preheat the oven to 200’C/180’C Fan/Gas 6
- Arrange the mushrooms on a baking tray. Scatter over the cheese, walnuts, thyme springs and butter.
- Cook for 10 minutes until the cheese is melted and the mushrooms are softened. Arrange some rocket leaves on plates, then place the mushrooms on top.
