Makes a great start for a dinner party – or a Saturday brunch.



4 large field mushrooms or Portabella mushrooms 100 g/4 oz Gorgonzola or other blue cheese, crumbled 25 g/1 oz walnuts, toasted and roughly chopped 4 thyme sprigs Large knob of butter, cut into small dice Rocket leaves to serve


  1. Preheat the oven to 200’C/180’C Fan/Gas 6
  2. Arrange the mushrooms on a baking tray. Scatter over the cheese, walnuts, thyme springs and butter.
  3. Cook for 10 minutes until the cheese is melted and the mushrooms are softened. Arrange some rocket leaves on plates, then place the mushrooms on top.
