Spicy chicken with a lovely dressing, makes for a good brunch as well.

Ingredients

500g/1 lb minced chicken 2 garlic cloves, crushed 1 tsp ground cumin 2 tsps ground coriander 2 tsps fresh coriander, chopped 200g/7 oz Greek yoghurt 1 tbsp mint sauce ¼ cucumber, coarsely grated and squeezed to remove excess liquid Salt and freshly ground black pepper

Recipe

  1. Put the minced chicken, garlic, cumin, ground coriander and fresh coriander in a bowl. Season with salt and pepper and mix well.
  2. Using wet hands, make 12 even-sized sausage shapes from the mixture and thread on to metal skewers, pressing firmly. Cook under a preheated hot grill for 10 minutes, turning occasionally, until cooked through and browned.
  3. Meanwhile mix together the yoghurt, mint sauce and cucumber. Take the koftas off the skewers and serve in warmed pitta breads with salad leaves, tomatoes and the yoghurt dressing.
