So easy to prepare and tastes so much better than anything you can buy ready-made.
2 tbsp sunflower oil 1 onion, chopped 2 large carrots, peeled and chopped 2 sticks celery, peeled and chopped 1 litre low-salt chicken stock, hot 2 large cooked chicken breasts, sliced Small bunch flat-leaf parsley, chopped Salt and freshly ground black pepper
- Heat the oil in a large saucepan set over a medium heat until hot.
- Add the onion, carrot, celery and a pinch of salt. Sweat for 5 minutes until slightly softened.
- Add the stock and simmer for 10 minutes, then stir in the chicken.
- Cook for a further 5 minutes and season to taste with salt and pepper Stir in the chopped parsley and ladle into warmed soup bowls.
