Everyone has their own favourite club sandwich – this is certainly one to try.

3 slices white bread, crusts removed 4 rashers smoked streaky bacon 4 slices cheese ½ cooked chicken breast, sliced Handful of rocket


  1. Preheat the grill to its highest setting.
  2. Grill the bread and bacon for 2 minutes, then turn everything over and top 2 of the bread slices with cheese. Grill for 2 more minutes or until the bacon is crisp and the cheese has melted.
  3. Top one of the cheese toasts with 2 rashers of bacon, half of the chicken and half of the rocket.
  4. Top with the second cheese toast and top with the rest of the bacon, chicken and rocket.
  5. Cut in half diagonally and secure each half together with a cocktail stick.
Variation: Add a sliced avocado to the sandwich for a buttery-smooth texture.
