Cod with Satay Sauce
To serve – 4
Preparation time – 5 minutes
Cooking time – 15 minutes
The cod can be replaced with any white fish that is available, try pollack, hake or coley.
4 portions cod fillet 4 tbsp crunchy peanut butter 2 tbsp runny honey 3 tbsp light soy sauce 1 lime juiced ½ tsp Chinese 5-spice powder Boiled rice to serve
- Preheat the oven to 190’C/170’C Fan/375’F/Gas 5.
- Put the cod in a greased baking dish.
- Mix together the peanut butter, soy sauce, honey, lime juice and 5-spice powder, then pour it over the cod.
- Bake the cod for 15 minutes or until just cooked in the centre, then serve with the rice and the sauce from the dish spooned over.
