Couscous with Prawns

Cooking time – 20 minutes

A quick, light dish can be eaten hot or cold.

400 ml/ 14 fl oz hot fish or chicken stock 2 shallots, chopped 1 clove garlic, chopped 350 g/ 12 oz small, firm courgettes, thinly sliced 3 tbsps olive oil Salt and freshly ground black pepper 225 g/ 8 oz couscous Handful of fresh mint, chopped 225 g/ 8 oz peeled, cooked prawns To Serve: Harissa Sauce (optional)


  1. Heat 2 tbsps of oil in a frying pan, add the shallots, garlic and courgettes, stir to coat them with oil, then fry for 4 minutes until slightly softened. Season to taste.

  3. boil then stir in the couscous. Remove from the heat, cover and leave to stand for 10 minutes until the stock is absorbed.
  4. Heat remaining oil in a small frying pan, stir in the prawns and heat through.
  5. Add the prawns and the mint to the couscous and season to taste.
  6. Serve accompanied by a side dish of Harissa sauce, if using.
