Crab Cocktail with Baby Avocados
To serve – 4
Preparation time- 10 minutes
A real taste of summer.
4 tbsps mayonnaise 2 tbsps Greek yoghurt 3 tbsps lime juice ½ - 1 tsp wasabi paste 2 tbsps chopped fresh coriander 200 g/7 oz fresh white crab meat 4 ripe baby avocados Salt and pepper Ready-prepared watercress, to garnish
- Mix together the mayonnaise and yoghurt, then stir in 1 tbsp of the lime juice and the wasabi paste, to taste. Add the coriander and crab meat, season to taste and toss to mix well.
- Cut the avocados in half lengthways and remove the stones, then brush with the remaining lime juice. Place 2 halves on each serving plate. If the avocados do not keep upright, take a small slice from the bottom so that they remain stable on the plate.
- Fill the avocados with the crab mixture and garnish with watercress.
- Serve immediately
