Fish Balls in Tomato Sauce
Preparation time – 5 minutes
Cooking time – 15 minutes
Quick nutritious meal is a great choice for young children as there are no bones. Serve with green vegetable or spaghetti.
450 g/ 1 lb white fish fillets, such cod, haddock, hake or hoki, skinned and boned 60 ml/4 tbsp fresh wholemeal breadcrumbs 30 ml 2 tbsp chopped chives or spring onion 400 g/ 14 oz tin chopped tomatoes 50 g/ 2 oz button mushrooms, sliced Salt and freshly ground black pepper
- Cut the fish fillets into chunks; place in a food processor. Add the breadcrumbs, chives or spring onion. Season and process until the fish is chopped but still with some texture. Divide the fish mixture into about 16 even-sized pieces, then mould into balls using your hands.
- Place the tomatoes and mushrooms in a pan, cook over a medium heat until boiling. Add the fish balls, reduce heat, cover and simmer for about 10 minutes until cooked.
- Serve hot.
