French Toast

Cooking time – 4 minutes

Wonderfully quick – try serving with a raspberry or strawberry sauce.


2 eggs, beaten 1 tsp vanilla extract 100 ml/3 ½ fl oz milk 1 tbsp caster sugar, plus extra for sprinkling ½ tsp ground cinnamon 4 thick slices of bread 25 g/ 1oz un-salted butter


  1. Whisk the eggs with the vanilla extract, milk, sugar and cinnamon in a shallow dish. Place the slices of bread in the mixture, turning to coat both sides so that they absorb the liquid.
  2. Heat the butter in a non-stick frying pan. Use a palette knife or fish slice to transfer the soaked bread to the hot pan and fry for 2 minutes on each side until golden.
  3. Cut the toasts in half diagonally, sprinkle with a little caster sugar and serve immediately.
