Grilled Goat’s Cheese with Baby Beetroot

Beautiful sweet fresh beetroot marries so well with the strong goat’s cheese.

6 small raw beetroots 6 slices French bread 6 slices 250 g/9 oz goat’s cheese 30 ml/2 tbsp walnut oil Salt and freshly ground black pepper


  1. Cook the beetroots in boiling salted water for 40 minutes until tender. Leave to cool then remove the skin and slice the beetroots.
  2. Toast the French bread on both sides. Arrange the beetroot in a fan on the toasted bread then put a slice of goat’s cheese on top
  3. Place all the bread slices on a grill pan and grill until the cheese has melted and is golden brown.
  4. Serve immediately, drizzled with a little walnut oil and ground black pepper on top.
