Grilled Goat’s Cheese with Baby Beetroot
To serve – 6
Preparation time – 5 minutes
Cooking time – 10 minutes + 40 minutes for beetroot
Beautiful sweet fresh beetroot marries so well with the strong goat’s cheese.

6 small raw beetroots 6 slices French bread 6 slices 250 g/9 oz goat’s cheese 30 ml/2 tbsp walnut oil Salt and freshly ground black pepper
- Cook the beetroots in boiling salted water for 40 minutes until tender. Leave to cool then remove the skin and slice the beetroots.
- Toast the French bread on both sides. Arrange the beetroot in a fan on the toasted bread then put a slice of goat’s cheese on top
- Place all the bread slices on a grill pan and grill until the cheese has melted and is golden brown.
- Serve immediately, drizzled with a little walnut oil and ground black pepper on top.
