Haloumi with Paprika Oil
To serve – 4
Cooking time – 5 minutes
Really tangy – wonderful with some crunchy bread to mop up those lovely juices.
6 tbsps extra virgin olive oil 4 tbsps lemon juice ½ tsp smoked paprika 250 g/8 oz haloumi cheese, cut into bite-size chunks Salt and pepper
- Combine the oil, lemon juice and smoked paprika in a small bowl and season the mixture with salt and pepper.
- Heat a heavy-based frying pan until hot, then add the haloumi and toss over a medium heat until golden and starting to soften.
- Transfer immediately to a plate, drizzle over the paprika oil and serve with cocktails sticks to spike the haloumi.
