Honey Mustard Chicken
To serve – 4
Preparation time – 2 minutes
Cooking time – 25-30 minutes
Simplicity in itself. Serve with a chunky tomato and onion salad.

8 chicken thighs 60 ml/4 tbsp wholegrain mustard 60 ml/4 tbsp clear honey Salt & freshly ground black pepper
- Preheat the oven to 190’C/170’C Fan/375’F/ Gas 5
- Put the chicken thighs in a single layer in a roasting pan.
- Mix together the mustard and the honey, season with salt and pepper to taste and brush the mixture all over the chicken thighs.
- Cook for 25-30 minutes in the preheated oven, brushing the chicken with the pan juices occasionally, until cooked through. To test, run a skewer through and if the juices run clear they are then done.
