Hot and Sour Cucumber Salad

Preparation time – 8 minutes
Cooking time – 1-2 minutes

As the chillies are very hot – remember to remove from the salad before serving.


1 Cucumber, peeled 250 g cherry tomatoes, halved 2 shallots, finely sliced 2 bird’s eye chillies, split open 1 tbsp rice wine vinegar or cider vinegar Handful coriander leaves


  1. Finely slice the cucumber using a mandolin slicer if possible, and add the halved cherry tomatoes.
  2. Toss these with the shallots and chillies, season and dress with the vinegar. Allow the flavours to be absorbed for 5 minutes. If preferred – remove the chillies. Scatter the coriander leaves over and serve.
