Lemon Curd Pudding
Preparation time – 12 minutes
A simple mousse-like dessert, ideal for a quick dinner party dish
175 g/ 6 oz good quality lemon curd 150 ml/ 5 fl oz double cream 1 large egg white Salt 1 digestive biscuit or Italian biscotti biscuit
- Spoon the lemon curd into a bowl. In a separate bowl, whip the cream until it forms soft peaks, then fold into the lemon curd.
- Add a pinch of salt to the egg white and whisk until it forms soft peaks, then carefully fold* into the lemon mixture.
- Spoon into 4 serving glasses and chill for as long as possible.
- Just before serving, crush the biscuit and scatter the crumbs over the top of each dessert to give a sweet crunchy texture.
