Lemon, Mint and Chicken Skewers
To serve – 4
Preparation time- 2 minutes
Cooking time – 20 minutes
Such a wonderful and tasty light starter.
150 g/5 oz Greek yoghurt Finely grated rind and juice of 1 lemon 2 tbsp fresh mint leaves, chopped 2 tbsp olive oil 4 skinless chicken breast fillets, each cut into 8 pieces Salt and freshly ground black pepper
- Soak 8 small wooden skewers in water.
- Mix together the yoghurt, lemon rind and juice, mint and olive oil. Add the chicken pieces and stir well to coat.
- Thread the chicken onto the skewers and place on a foil-lined grill pan. Cook under a preheated hot grill for about 10 minutes, turning occasionally, and basting with remaining marinade, until the chicken is cooked and slightly charred at the edges.
- Slide the chicken off the skewers and serve in warmed pitta breads, with slices of cucumber and radish.
