Lemon, Mint and Chicken Skewers

Such a wonderful and tasty light starter.


150 g/5 oz Greek yoghurt Finely grated rind and juice of 1 lemon 2 tbsp fresh mint leaves, chopped 2 tbsp olive oil 4 skinless chicken breast fillets, each cut into 8 pieces Salt and freshly ground black pepper


  1. Soak 8 small wooden skewers in water.
  2. Mix together the yoghurt, lemon rind and juice, mint and olive oil. Add the chicken pieces and stir well to coat.
  3. Thread the chicken onto the skewers and place on a foil-lined grill pan. Cook under a preheated hot grill for about 10 minutes, turning occasionally, and basting with remaining marinade, until the chicken is cooked and slightly charred at the edges.
  4. Slide the chicken off the skewers and serve in warmed pitta breads, with slices of cucumber and radish.
