Mango and Passion Fruit Fool
To serve – 2
Preparation and cooking time – 15 minutes + refrigeration time
A creamy sumptuous desert.
Nutritional count per serving:
1.8g fat of which saturates 1.1g; 491kj/118 kcal; 21g carbohydrate; 3.9g protein; 1.2g fibre.
1 small mango (300g) 1 tbsp passionfruit pulp 1 egg white 2 tbsp caster sugar 200 g vanilla yoghurt
- Cut cheeks from mango; remove skin, roughly chop. Blend or process mango until smooth. Combine mango puree and passionfruit in a small bowl.
- Beat egg white in a small bowl with electric mixer until soft peaks form.
- Gradually beat in sugar until dissolved. Fold egg white into yoghurt, in batches.
- Layer mango mixture and egg-white mixture into 2 serving glasses. Cover, refrigerate 15 minutes before serving.
