Mediterranean Chicken Burgers

Preparation time – 25 minutes
Cooking time – 12 minutes
Mouth-watering alternative to meat burgers.


600 g/ 1 lb 5 oz chicken thigh, chopped 1 clove garlic, crushed 1 tbsp lemon zest, finely grated 25 g Parmesan cheese, finely grated Small bunch of basil, chopped 2 tbsp olive oil Salt and pepper


  1. Put all the ingredients except the oil into a food processor. Pulse until finely chopped and evenly mixed. You may need to scrape down the sides a few times.
  2. Shape the mixture into 6 thin patties and layer between sheets of greaseproof paper.
  3. Chill for 30 minutes to firm up.
  4. Heat the oil in a large frying pan or griddle pan and fry the burgers in 2 batches for 3 minutes on each side or until cooked through and golden brown.
