Mini Smoked Salmon Frittatas

Makes 12
Nestle 2 or 3 of these little beauties in a bed of crisp green salad for a light lunch.

Preparation time – 5 minutes
Cooking time – 20 minutes


12 eggs 250 ml single cream 50 g smoked salmon, chopped 3 spring onions, sliced 2 tbsp fresh parsley, chopped Salt and freshly ground black pepper


  1. Preheat the oven to 180’C/160’C Fan/350’F/Gas 4.
  2. Place the eggs, cream, smoked salmon, spring onions, parsley and salt and pepper in a large bowl and whisk together well.
  3. Divide the mixture among twelve 125 ml muffin holes and bake for 20 minutes, or until set.
  4. Serve hot or warm.
