Muffin Pizza Melts
To serve – 4
Preparation time – 10 minutes
Cooking time – 10 minutes+
Try being creative with the toppings, such as ham and pineapple instead of salami and olives.

4 English muffins, split 90 g Tomato paste 125 g Cheddar cheese, grated 16 thin slices salami, cut into strips ½ green pepper, finely chopped 12 pitted black olives, sliced
- Place the muffins, cut side down, on a baking tray and grill under a moderately hot grill until lightly toasted.
- Spread the cut side of the muffins with the tomato paste and season to taste with salt and freshly ground black pepper.
- Top with the cheese, salami, green pepper and olives.
- Return the muffin to the grill for 3-5 minutes, or until the cheese has melted.
