Muffin Trifle with Boozy Berries
To serve – 4
Preparation time – 10 minutes
Who can resist a good boozy trifle?
400 g/13 oz mixed berries, such as strawberries, redcurrants, raspberries etc. plus extra to decorate 3 tbsp crème de cerises or cherry brandy 1 tbsp maple syrup 2 large blueberry muffins, sliced 150 ml/ ¼ pint double cream
- Put the fruit in a bowl with the cherry liqueur or brandy and maple syrup and crush the berries with the back of a fork until well combined.
- Arrange the sliced muffins in the bottom of a glass dish and spoon the fruit on top.
- Whip the cream with a hand-held electric whisk until it forms soft peaks and spoon on top of the fruit. Decorate with a few extra berries before serving.
