Perfect for a summer’s evening in the garden – maybe with a few beers.


200 g/7 oz plain tortilla chips 200 g/7 oz ready-made fresh tomato salsa 400 g/13 oz tin mixed beans, drained and rinsed 200 g/7 oz jar sliced green jalapeños, drained 125 g/4 oz mozzarella cheese, grated


  1. Place the tortilla chips in a shallow ovenproof dish. Spoon over the salsa, followed by the mixed beans, then scatter over the jalapeños and cheese.
  2. Cook under a preheated grill for 3-4 minutes until the cheese has melted. Serve immediately with soured cream and guacamole.
