Orzo Pasta with Parmesan and Rocket
Preparation time –5 minutes
Cooking time – 10 minutes
A really good pesto is essential to this dish.
200 g/ 7 oz dried orzo pasta 50 g/ 1 ¾ oz rocket, chopped 4 tbsp pesto 2 tbsp Parmesan shavings 60 g/ 2 oz frozen peas, defrosted Salt and freshly ground black pepper
- Cook the pasta in a large pan of boiling salted water according to the instructions on the packet, or until al dente.*
- Drain well, then stir in the rocket, peas and pesto. Season to taste with salt and freshly ground black pepper.
- Divide the pasta between 2 warmed bowls and scatter over the Parmesan shavings.
