Pepper Steak with Marsala Sauce
To serve – 2
Preparation time – 1 minute
Cooking time – 6-9 minutes
A rich decadent sauce, just right for the peppery steaks.
1tsp sunflower oil 15g// ½ oz butter 1tbsp mixed peppercorns, crushed 2 sirloin or rump steaks about 1cm/ ½ inch thick 125g/4oz ready-sliced mushrooms 2tbsps marsala wine 6tbsps soured cream Salt Mangetout to serve
- Heat the oil and butter together in a large frying pan. Press the peppercorns on both sides of the steaks to form an even coating.
- Place the mushrooms and steaks in the hot pan and cook the steaks for 2 - 3 minutes each side for rare, or 3-4 minutes each side for medium to well done, stirring the mushrooms occasionally. Remove the steaks from the pan and keep warm.
- Add the marsala to the pan and cook for 1 minute, then stir in the soured cream and cook over a low heat until the sauce thickens, do not allow to boil. Season with salt and pour the sauce over the steaks and serve with mangetout.
