Pepper Steak with Marsala Sauce

A rich decadent sauce, just right for the peppery steaks.


1tsp sunflower oil 15g// ½ oz butter 1tbsp mixed peppercorns, crushed 2 sirloin or rump steaks about 1cm/ ½ inch thick 125g/4oz ready-sliced mushrooms 2tbsps marsala wine 6tbsps soured cream Salt Mangetout to serve


  1. Heat the oil and butter together in a large frying pan. Press the peppercorns on both sides of the steaks to form an even coating.
  2. Place the mushrooms and steaks in the hot pan and cook the steaks for 2 - 3 minutes each side for rare, or 3-4 minutes each side for medium to well done, stirring the mushrooms occasionally. Remove the steaks from the pan and keep warm.
  3. Add the marsala to the pan and cook for 1 minute, then stir in the soured cream and cook over a low heat until the sauce thickens, do not allow to boil. Season with salt and pour the sauce over the steaks and serve with mangetout.
