Pineapple Panettone Sandwich

Cooking time – 2-3 minutes

Works really well with any number of fruit fillings.


4 pineapple rings in juice, drained 4 slices Panettone 15 g/ ½ oz mini marshmallows 40 g/1 ½ oz macadamia nuts, crushed 2 tbsps vanilla sugar Icing sugar, sifted to decorate


  1. Pat the pineapple rings dry on kitchen paper and arrange them on 2 slices of Panettone. Scatter with the marshmallows and crushed macadamia nuts and sprinkle with the vanilla sugar. Top with the remaining 2 slices of Panettone.
  2. Toast in a sandwich grill for 2-3 minutes, or according to the manufacturer’s instructions, until the bread is golden and the marshmallows are beginning to melt.
  3. Slice each sandwich into small rectangles and dust with icing sugar. Serve immediately.
