Quick Hazelnut Melts

Makes – 20

Cooking time – 15 minutes

Great for adding texture and accompaniment to any desert.


50 g/2 oz blanched hazelnuts 125 g/4 oz butter, softened plus extra for greasing 50 g/2 oz caster sugar 150 g/5 oz plain flour


  1. Grind the hazelnuts in a food processor until fairly smooth, but still retaining a little texture. Dry-fry in a heavy-based frying pan over a low heat until evenly golden. Tip into a bowl and stir until cool.
  2. Blend the butter and sugar together in the processor until creamy. Add the flour and cooled nuts and process again to make a soft dough.
  3. Take walnut-size pieces of the dough and shape into rolls, then pat into flat ovals. Place on a greased baking sheet and bake in a pre-heated oven, 190’C/170’C Fan/375’F/Gas 5 for 12 minutes, until just golden. Cool on a wire rack.
