Roasted Garlic and Thyme Chicken
To serve – 4
Preparation time – 5 minutes
Cooking time – 20 minutes
Super quick and super tasty that all the family will love.
4 chicken breasts, skin on 3 cloves garlic, crushed 3 sprigs thyme, leaves stripped 50g butter 2 red onions, cut into thin wedges 140g pancetta cubes Oil for roasting 150g mixed salad leaves, dressed to serve
- Heat the oven to 200’C/180’c Fan/400’F/ Gas mark 6. Put the chicken skin-side up in a small roasting tine.
- Mix together the garlic, thyme and butter and dot over the chicken. Scatter around the red onions and pancetta and drizzle with oil.
- Roast for about 20 minutes until the chicken has cooked through and the onions are softened.
- Divide the salad between 4 plates and top with the red onions, pancetta and chicken.
