Preparation time – 5 minutes
Crispy, crunchy and very tasty. Ideal for a quick lunch.
4 plain flour tortillas ¼ iceberg lettuce, shredded 4 tomatoes, diced 1 onion, finely chopped 400 g tin chickpeas, drained and rinsed 3 tbsp coriander leaves, finely chopped 2 tbsp olive oil 1 tbsp lime juice 4 tbsp soured cream Salt and freshly ground black pepper
- Lay the tortillas out on a chopping board and divide the lettuce between them.
- Mix together the tomato, onion, chickpeas, coriander and oil. Season with salt and freshly ground black pepper. Spoon the mixture on top of the lettuce.
- Stir the lime juice into the soured cream, then drizzle it over the salsa.
- Fold the tortillas in half and serve.
