Serves 4

Preparation time – 5 minutes

Crispy, crunchy and very tasty. Ideal for a quick lunch.


4 plain flour tortillas ¼ iceberg lettuce, shredded 4 tomatoes, diced 1 onion, finely chopped 400 g tin chickpeas, drained and rinsed 3 tbsp coriander leaves, finely chopped 2 tbsp olive oil 1 tbsp lime juice 4 tbsp soured cream Salt and freshly ground black pepper


  1. Lay the tortillas out on a chopping board and divide the lettuce between them.
  2. Mix together the tomato, onion, chickpeas, coriander and oil. Season with salt and freshly ground black pepper. Spoon the mixture on top of the lettuce.
  3. Stir the lime juice into the soured cream, then drizzle it over the salsa.
  4. Fold the tortillas in half and serve.
Variation: These tacos can be topped with pan-fried pieces of chicken, steak or chorizo.
