Sausages with Spiced Wine and Apples

A family favourite gets a new twist on flavour with a delicate white wine and apple sauce.

300 ml/ 10 fl oz dry white wine 250 g/ 9 oz good-quality pork sausages 1 shallot or ½ small onion, grated 2 crisp dessert apples, peeled, quartered, cored and sliced 70 g/ 2 ½ oz butter, at room temperature 200 ml/ 7 fl oz chicken or vegetable stock 2 tbsps light brown sugar ½ tsp ground cinnamon


  1. Bring the wine to a boil in a large frying pan and poach* the sausages gently for 10 minutes.
  2. Gently melt a knob of butter in a second frying pan. Remove the sausages from the first pan and reserve the wine. Discard any loose skins and fry the sausages slowly in the butter until they have browned all over.
  3. Add the shallot or onion to the wine in the first frying pan with the apples stock, brown sugar, cinnamon and the remaining butter. Bring the mixture to the boil, reduce the heat and simmer until the apples become tender and the liquid is reduced to a thin syrup. Serve the sausages with the apple sauce.
