Smoked Haddock Rarebit

Cooking time – 7-8 minutes

Delicious starter on a bed of lettuce, or as a main meal with mashed potatoes and peas.


4 smoked haddock fillets (about 150 g/5 oz each) 300 ml/½ pint ready-made cheese sauce 1 tsp English mustard 2 egg yolks 2 tsps Worcestershire sauce 2 tbsps chopped flat-leaf parsley 25 g/1 oz mature Cheddar cheese, grated


  1. Place the haddock in a single layer in a deep frying pan with a lid and pour over enough boiling water to cover. Bring to the boil, cover and simmer gently for 2 minutes, until half-cooked. Carefully transfer the fish fillets to a shallow ovenproof dish and keep warm.
  2. Meanwhile, place the cheese sauce in a small pan and heat through. Remove from the heat and stir in the mustard, egg yolks, Worcestershire sauce and parsley.
  3. Top the fish with the mixture, sprinkle over the grated cheese and cook under a preheated hot grill for 3-4 minutes until bubbling and golden.
  4. Serve at once.
