Full, rich flavours of the Mediterranean for an easy family supper. Just serve with some crusty bread.

2 tbsps olive oil 8 boneless, skinless chicken thighs 1 medium red onion, thinly sliced 1 clove garlic, crushed 1 large red pepper, sliced 1 large yellow pepper, sliced 400 g/14 oz tinned chopped tomatoes 150 ml/ 5 fl oz dry white wine 1 tbsp paprika 75 g/ 2 ¾ oz chorizo sausage, cut into thick slices 25 g/ 1 oz pitted black olives Salt and freshly ground black pepper To Garnish: Bunch of Parsley, chopped


  1. Heat the oil in a large flameproof casserole, then cut the chicken thighs in half and fry them over a high heat until golden. Add the onion, garlic and peppers and fry until they are lightly browned and slightly softened.
  2. Stir in the tomatoes, wine and paprika and bring to the boil. Add the chorizo and simmer for 15 minutes or until the chicken is cooked.
  3. Halve the olives, add them to the casserole. Then season to taste.
  4. Sprinkle over the chopped parsley and serve.
