Spanish Style Chicken
Preparation time – 10 minutes
Cooking time – 20 minutes
Full, rich flavours of the Mediterranean for an easy family supper. Just serve with some crusty bread.

2 tbsps olive oil 8 boneless, skinless chicken thighs 1 medium red onion, thinly sliced 1 clove garlic, crushed 1 large red pepper, sliced 1 large yellow pepper, sliced 400 g/14 oz tinned chopped tomatoes 150 ml/ 5 fl oz dry white wine 1 tbsp paprika 75 g/ 2 ¾ oz chorizo sausage, cut into thick slices 25 g/ 1 oz pitted black olives Salt and freshly ground black pepper To Garnish: Bunch of Parsley, chopped
- Heat the oil in a large flameproof casserole, then cut the chicken thighs in half and fry them over a high heat until golden. Add the onion, garlic and peppers and fry until they are lightly browned and slightly softened.
- Stir in the tomatoes, wine and paprika and bring to the boil. Add the chorizo and simmer for 15 minutes or until the chicken is cooked.
- Halve the olives, add them to the casserole. Then season to taste.
- Sprinkle over the chopped parsley and serve.
