Sweet Almond Frittata
To serve – 4
Cooking time – 30 minutes
Can also be saved for the following day for a sweet lunch-box treat.
5 large eggs 125 g/4 oz icing sugar, plus extra for dusting 75 ml/3 fl oz double cream 50 g/2 oz ground almonds 1 tsp vanilla extract 25 g/1 oz butter 50 g/2 oz flaked almonds Vanilla ice-cream or cream to serve
- Beat the eggs in a large bowl with 100 g/3 ½ oz of the icing sugar, cream, ground almonds and vanilla extract.
- Melt the butter in a large ovenproof frying pan and pour in the egg mixture. Cook very gently for 8-10 minutes, stirring occasionally, until the egg just begins to set. Scatter over the flaked almonds and sprinkle with the remaining icing sugar, then place in a preheated oven 200’C/180’C Fan/400’F/ Gas 6 for about 10 minutes until set.
- Remove the pan from the oven and place under a preheated medium grill for 2-3 minutes, until golden, then cool slightly and cut into slices. Dust with icing sugar and serve with vanilla ice-cream or cream.
