Tomato, Tofu and Hot Pepper Salad
Serves 2
Preparation time- 8 minutes
Cooking time – 1-2 minutes
Zing up the taste-buds with this lovely crunchy starter.
Ingredients
25 g/1 oz pine nuts 1 large beefsteak tomato, thinly sliced 125 g/4 oz Tofu 50 g/2 oz hot piquante peppers in brine or oil, drained and thinly sliced 3 tbsps snipped chives 2 tbsps chopped flat leaf parsley 40 g/1 ½ oz sultanas 4 tbsps olive oil 2 tbsps lemon juice 2 tsps caster sugar Salt and freshly ground black pepper Crusty bread to serve
Recipe
- Heat a frying pan until hot; add the pine nuts and dry-fry for 1-2 minutes, stirring occasionally until golden.
- Arrange the tomato slices on 2 serving plates and season lightly. Crumble the tofu into a mixing bowl, add the peppers, chives, parsley, pine nuts and sultanas and mix together.
- Whisk together the olive oil, lemon juice and sugar, season to taste and toss with the tofu mixture. Spoon over the tomatoes and serve with crusty bread.
