Fresh, healthy fruity jellies that look great. Takes a little longer to set, but so worth it.
Nutritional count per serving
Energy 61kcal/260kj; Carbohydrate 12g of which sugars 12g; Fat 0g of which saturates 0g; Fibre 0.2g; Sodium 0.2g.
1 packet gelatine leaves (12 x 1.75 g leaves) 3 x 500 ml cartons fresh fruit juice such as pineapple, cranberry, kiwi and apple. (Try to get different colours)
- Put three leaves of gelatine in a shallow bowl and cover them with cold water. Allow them to soften for 10 minutes until pliable.
- Heat one fruit juice gently over a low heat in a small saucepan. When the gelatine is soft, remove it from the water and squeeze out the excess. Take the pan off the heat. Add the gelatine; whisking to dissolve. Cool, then divide equally between 10 small 150 ml/5 fl oz plastic glasses. Chill to set.
- Repeat the process with the second jelly; make sure you choose a contrasting colour to the first. Make sure the second fruit juice is cold before pouring it carefully on top of the set jelly.
- Repeat the process with the final fruit juice and return to the fridge to set before serving.
