1 packet gelatine leaves (12 x 1.75 g leaves) 3 x 500 ml cartons fresh fruit juice such as pineapple, cranberry, kiwi and apple. (Try to get different colours)

  1. Put three leaves of gelatine in a shallow bowl and cover them with cold water. Allow them to soften for 10 minutes until pliable.
  2. Heat one fruit juice gently over a low heat in a small saucepan. When the gelatine is soft, remove it from the water and squeeze out the excess. Take the pan off the heat. Add the gelatine; whisking to dissolve. Cool, then divide equally between 10 small 150 ml/5 fl oz plastic glasses. Chill to set.
  3. Repeat the process with the second jelly; make sure you choose a contrasting colour to the first. Make sure the second fruit juice is cold before pouring it carefully on top of the set jelly.
  4. Repeat the process with the final fruit juice and return to the fridge to set before serving.
