Tuna Steaks with Wasabi Butter
Serves 4
Preparation time – 5 minutes
Cooking time – 20 minutes
East meets West in this exciting, well-flavoured butter. Serve with little new potatoes and salad.

Ingredients
4 tuna steaks – 175 g/ 6 oz each 1 tsp lemon juice 1tsp sesame seeds, dry roasted* A few sprigs each of basil, chives, coriander and parsley, finely chopped. Reserve a few for garnish 125 g/ 4 ½ oz unsalted butter 1 tbsp wasabi paste 1 tbsp soy sauce 3 drops Tabasco sauce 1 tbsp olive or sunflower oil
Recipe
- To a bowl add sesame seeds, lemon juice, chopped herbs, butter, wasabi paste, soy sauce, and Tabasco. Beat until smooth. Shape the flavoured butter into a sausage, wrap in foil and chill in the freezer.
- Heat a griddle or frying pan over a moderately high heat. Brush both sides of the tuna with the oil and fry for 3 – 4 minutes on each side.
- Cut the butter into rounds. Place the steaks on four plates, lay a round of butter on top of each and garnish with the sprigs of herb.
