Vanilla Custard

Who can resist this creamy accompaniment to almost any dessert.


300 ml/10 fl oz single cream 3 egg yolks 1 tsp cornflour 1 tbsp caster sugar ½ tsp vanilla extract


  1. Heat the cream in a pan until nearly boiling.
  2. In a large bowl, whisk the egg yolks, cornflour, sugar and vanilla extract.
  3. Pour the cream into the bowl, whisking all the time, then return to the pan. Whisk over a low heat until the sauce has thickened.
  4. If the sauce starts to curdle, simply remove from the heat and whisk vigorously as it cools. It will become smooth again.
