A classic American salad with a wonderful crunch.


55 g/2 oz plain yoghurt 55 g/2 oz mayonnaise 2 tbsp lemon juice 2 tbsp warm water 150 g/5 oz walnut halves 2 Braeburn apples, cored and diced 225 g/8 oz red seedless grapes, halved 4 sticks celery, peeled and thinly sliced 2 heads of Little Gem lettuce, leaves separated Salt and freshly ground black pepper


  1. Whisk together the yoghurt, mayonnaise, lemon juice, warm water and seasoning in a bowl.
  2. Add the walnuts, apple, grapes and celery, stirring well to coat in the dressing.
  3. Arrange the lettuce leaves in serving plates and top with the dressed mixture and serve.
