Warm Brie, Chicory and Bacon Salad
To serve – 2
Preparation time – 5 minutes
Cooking time – 15 minutes
Can easily be doubled to make a light lunch dish.
1 tbsp Cider Vinegar 3 tbsp olive oil 2 heads chicory, leaves separated 6 rashers streaky bacon, grilled until crisp, then broken into pieces 100 g Brie, sliced. Try chilling in fridge for 30 minutes first to make slicing easier Small bunch of chives, snipped
- Preheat a medium grill.
- Whisk together the cider vinegar and olive oil to make the dressing. Toss the chicory and bacon with the dressing and arrange on 2 heatproof plates. Top with slices of Brie then grill until melted.
- Sprinkle with chives and serve.
